CARROT CAKE

½ cup grated Carrot
1-1/4 cup chopped Dates
1 cup Raisins
1-1/3 cup Water
¼ cup Unsweetened Applesauce
1 tsp Cinnamon
1 tsp Ground Cloves
1 tsp Nutmeg
2 cups Whole Wheat Flour
1 tsp Baking Powder
1 tsp Baking Soda

Preheat oven to 350 degrees. Place the grated carrots, dates, raisins, water, applesauce, cinnamon, cloves and nutmeg in a saucepan and bring to a boil. Reduce the heat and simmer for 5 minutes. Cool.

Mix the dry ingredients.

Combine the wet and dry mixtures.

Pour into an 8 inch by 8 inch non-stick cake pan and bake for 45 to 50 minutes.

Optional – Add ½ cup chopped Nuts.
