CHOCOLATE APPLESAUCE CUPCAKES

These cupcakes are low in saturated fat!

1 cup Unsalted low-fat Margarine
3/4 cup Sugar
2 Eggs
1/2 cup Unsweetened Cocoa Powder
1-1/2 cup Unsweetened Applesauce
1-3/4 cup All Purpose Flour
1 tsp Low Sodium Baking Powder
1/2 tsp Salt

Preheat oven to 350 degrees. Spray two 12-cup muffin pans with non-stick cooking spray.

Cream the margarine and sugar with an electric mixer for 1 to 2 minutes. Add the eggs and cocoa powder. Mix until smooth. Fold in the applesauce.

In a separate bowl, combine flour, baking powder, baking soda, and salt.

Stir gently into the egg mixture. Do not over-stir.
Spoon the batter into the muffin tins.

Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean.
