8 oz pkg. Dry White Cake Mix, sugar and sodium free
Cooking Spray
1-1/2 oz pkg. sugar-free, reduced calorie, instant Pudding
3 cups Skim Milk
20 oz ...










BANANA BRAN CAKE

1 cup All-Bran Cereal (can use Bran Buds or 100% Bran)
1/3 cup Vegetable Oil
½ cup Liquid Egg Substitute (or ½ cup Egg Whites)
¾ cup Water
1 tsp Vanilla Extract
1 tsp Banana Extract
1-1/4 cup White All-Purpose Flour
¼ cup Sugar
2 tbsp Powdered Buttermilk
1 tsp Baking Soda
½ cup medium Bananas

Preheat oven to 350 degrees. Lightly grease a 9 inch square pan with margarine.
Mix the bran, oil, eggs, water and flavorings for 30 seconds and let stand for 30 to 45 minutes.
Mix the flour, sugar, powdered buttermilk mix, baking soda, and sugar substitute and set aside.
After 30 to 45 minutes, slice the bananas and add to the bran mixture. Mix until smooth.
Stir the flour mixture into the bran/banana mixture. Spread the batter in the pan and bake for 25 to 30 minutes.
