Many diabetic cookie recipes involve using artificial sweeteners. These sweeteners make creating diabetic cookies much easier than it used to be!
Splenda (purchased in bulk - not the little packets) measures and acts just like sugar, and is often a good choice for baking. Aspartame loses its sweetness at high temperatures, so avoid any products that are based on aspartame, and don't try to substitute it in your recipes. Most others are fine. You may also try using a blend that is 50% sugar.

Diabetic Chocolate Chip Cookies
Snap Quick Diabetic Peanut Butter Cookies
There is no sugar or flour in these cookies! They are excellent - easy!
1 cup chunky peanut butter 1 cup Splenda 1 egg 1 tsp cinnamon 1/2 tsp nutmeg 1 tsp vanilla
Preheat oven to 350 degrees. Combine all of the ingredients. Using a small spoon, drop cookie dough onto an ungreased cookie sheet. Press each ball of dough with a fork to flatten it into a cookie shape about 1/3 inch thick. Bake for 8 to 10 minutes.
